Well, well, well, look who it is. That would be me! I know I’ve been gone for a LONG while but it’s been a pretty hectic year. Lots of ups and downs with even more changes. I’m not going to get into all those details though because the most important thing is I’M BACK! I am planning on changing the look of the blog some and will be trying to post more frequently. The goal is to make something of this page and I am so much more determined to do that! And now on to our welcome back post…
I thought a Sunday Family Dinner would be a good way to come back since it’s how we started this blog. Of course I forgot my camera at home so all these pictures are from my iPhone but we’ll make them work. We technically had our family dinner for March in the middle of the month and that was St. Patrick’s Day themed. But with the Easter holiday being earlier this year, we had 2 dinners this month.
We planned a pretty simple (yet delicious) dinner for Easter. No menu written out but we did have this lovely “Happy Easter” on the chalkboard. And yes, that is meant to be a bunny underneath. Don’t judge, the effort counts!
First, my mom and sister made these adorable deviled eggs that mom found on Pinterest. Pinterest has everything, it’s amazing!
Next up we have an amazing Blueberry Feta Salad that you can find here. This really is the perfect Spring salad. One of the big differences in the one we made is that we didn’t have the golden balsamic vinegar the dressing calls for so we used a peach one instead. The salad was a big hit with the family and we will definitely be making again!
The next dish, the Spring Asparagus Salad, became a family favorite after my first post and figured it would be a great addition for Easter dinner. About 15 minutes before we were going to be sitting down for dinner we realized we didn’t have any kind of rolls or bread. That just couldn’t happen so we threw together some Red Lobster biscuits from the box and they were worth the last minute baking. Who doesn’t love Red Lobster biscuits?!
On to our main dishes. We traditionally make a ham for Easter dinner so there was no question (in my mind at least) that a ham would be on this year’s menu. However, a couple of us don’t really eat anything pork so Steve made a scrumptious salmon in addition to a ham.
On Friday, mom, Natasha and I went to World Market and found a ton of amazing sounding drinks. We decided to go with this sparkling red grape with hibiscus juice. BEST DECISION EVER! I absolutely loved this drink and actually regret not buying 2 bottles. World Market had a few other sparkling grape juice flavor that I want to go back and try. If you are near one of their stores or find yourself in one, you should 100% get this juice to try for yourself.
Last, and most importantly, is dessert. Mom found this adorable little bunny cake and asked me to make it. When you look at the link, it seems like a pretty straight forward process. Getting the bunny shape itself wasn’t where I ran into my problems. The actual cake recipe makes a decent amount of batter and it tells you to make cupcakes with the leftover but it doesn’t tell you how much to pour in the cake pan. I think I ended up putting too much because the cake wasn’t cooking in the top middle so I kept leaving it in the oven but then the sides were getting cooked too much. I basically just scooped out the under-cooked parts and filled them with icing. Can’t go wrong with extra icing right?
And because I put more batter, my bunny was extra chubby once I put him together. But he was delicious!
